Shearing Cake

Shearing Cake (Cacen Gneifo)

For an 8 inch cake

8 oz plain flour

1 tsp baking powder

6 oz butter or marg

6 oz caster swugar

3 eggs beaten

2 oz finely choped candied peel

2 tsp caraway seeds

Rub in the butter and flour to a fine breadcrumb consistancy.  Add the other ingredients and stir together before adding the eggs and then the milk to make a soft drop mixture.

Place the mixture in a tin lined with parchment and bake for 60-75 mins at 180 deg C
