I recently came across an interesting recipe for an alternative to Welsh Cakes and they are called Tinkers Cakes (Teisenni tincar). They were made more cheaply and produced quickly on a metal plate near the open fire and given to tinkers as they called at the house peddling their wares. Tinkers Cakes (8-10) 4.5 oz self-raising flour pinch of salt 2.5 oz butter cut in cubes 2oz Demerara sugar 1 small cooking apple approx 2tbsp milk caster sugar for dusting if required Mix dry ingredients and add the grated apple. Then add the milk to make a moist dough. Roll out on a floured board to 1/4 inch thickness cut into rounds and cook on a griddle for 4-5 minutes each side. Serve warm and eat fresh, spread with butter if preferred. Variation may be made by adding a pinch of cinnamon or mixed spice.
